Tomato and Vegetable Pasta Sauce

Happy Friday Everyone!

Just wanted to share a quick and delicious recipe for pasta sauce with you all.

Tomato and Vegetable Pasta Sauce


1 can of diced tomatoes
1 1/2 cans of tomato paste
1 cup of chopped mushrooms
1/2 cup of diced onions
1/2 of diced green bell peppers
1 cup of chopped zucchini
1/2 cup of chopped spinach
1/2 tbs of cayenne pepper
1 tbs of onion powder
1 tbs of minced garlic
fresh oregano and basil chopped


1.  In a sauce pan, empty one can of diced tomatoes.  Over medium heat, add in tomato paste until desired thickness is reached.

2.  Stir in dried spices and chopped vegetables.  

3.  Reduce heat and allow to simmer.  

4.  In the last few minutes of cooking, add in your chopped, fresh herbs.

5.  Serve over pasta!

Note:  Adding fresh herbs in during the last few minutes of cooking allows them to retain their flavour and delivers a more vibrant flavour to your dish.
